Feta, Spinach and Sweet Potato Hash

2 tbsp oil
2 small sweet potatoes, peeled and chopped into small cubes
1 tsp smoked paprika
½ tsp salt
½ tsp black pepper
100g baby spinach
10g fresh coriander, finely chopped

1) Take a large cast iron or heavy based frying pan and place on a medium heat. Add the oil, followed by the sweet potato, smoked paprika, cayenne pepper, salt and black pepper.
2) Fry for 15-20 minutes until the potatoes are golden and crispy, stirring occasionally.
3) Add the spinach and stir through, then place a lid on the pan for 2 minutes to help the spinach wilt.
4) Top with feta, coriander and a drizzle of Encona Limited Edition Carolina Reaper Chilli Sauce. Serve immediately.
