Spiced Sweet Potato Patties

  • 2 large sweet potatoes (peeled and cut into chunks)
  • 1 tin chickpeas (drained and rinsed)
  • 1 garlic clove, crushed
  • 2 spring onions, finely sliced
  • 10 g fresh coriander, finely chopped
  • 1 tbsp Encona West Indian Extra Hot Pepper Sauce
  • 1 tsp soft brown sugar
  • 1 tsp ground allspice
  • ½ tsp salt
  • ½ tsp black pepper
  • 70 g instant mashed potato flakes
  • 2 tbsp oil


  1. Get things started by tossing the sweet potatoes into a pan of cold, salted water and turning the heat up high.
  2. Once boiling, dial down the heat to a gentle simmer and cook for 15 minutes or until the potatoes soften. Then drain ‘em, mash ‘em and make sure they’re smooth and lump-free. Leave them to cool.
  3. Chuck the chickpeas into a big bowl and mash them, too. If you want, you can leave some of them whole for added texture (your kitchen, your rules). When you’ve finished, add them to the sweet potato mash.
  4. Tip everything else into the mash. That’s the garlic, spring onions, coriander, brown sugar, allspice, salt and pepper, and tastetastic Encona West Indian Extra Hot Pepper Sauce.
  5. When it’s all mixed in, shape 10 patties out of the mixture and dust each one with the mashed potato flakes. Remember, looks aren’t everything here – it’s all about the taste.
  6. Now it’s time to get cooking. Pop your frying pan on medium heat and add the oil, then sizzle the patties for 3-4 minutes on each side. Easy.
  7. Once cooked, tuck in right away. Go on, you deserve it.
