Carolina Reaper Mayo Dirty Burger

  • 1 Bottle of Encona Carolina Reaper Mayo
  • 450g quality minced beef
  • 1 tbsp tomato puree
  • 1/2 Red onion, sliced
  • Salt & pepper
  • 1/4 Small white cabbage (shredded)
  • 1 Grated carrot
  • 1/2 Red onion (thinly sliced)
  • 8 Mange tout
  • 1 Sweetcorn (charred for deeper flavour)
  • 4 Burger buns (seeded if you're feeling fancy)
  • 4 sliced cheese
  • 1 Lettuce half (shredded)


  1. Combine the beef, 1 tbsp Encona Carolina Reaper Chilli Mayo, tomato puree, onion and some salt and pepper in a bowl. Divide the mixture into 4 and shape into burgers. Leave to chill for 15 minutes to firm up (little tip: Make sure you seasoning your burger with a sprinkle of salt to allow for a nice browning whilst cooking).
  2. For the slaw, dry fry your corn on the cob for a couple minutes on each side until browned and charred. Carefully stand the cob on one end and slice down each side, separately the kernels. Once down, place into a bowl and combine all ingredients with a tbsp of Encona Carolina Reaper Mayo. Mix together and set aside.
  3. Time to get that sweat on. Cook the burgers for 5-8 minutes turning until browned and cooked to your liking. Add a slice of cheese and let that baby melt with the heat.
  4. Let’s assemble this masterpiece. Load the buns up with salad, slaw and a burger each adding a little extra mayo for Instagram (don’t be afraid of the heat!). Match made in heaven with some spicy wedges or onion rings alongside.
